To Do: Greek Chicken Salad

To Do: Feta Avocado Chicken Salad



SALAD:
8 cups romain lettuce
1 cup halved cherry tomatoes
1/2 cup corn
1 1/2 cups chopped cooked chicken
1 large avocado, sliced
1/2 cup crumbled goat or feta cheese
1/4 cup toasted pine nuts
DRESSING:
3 Tbsp. white wine vinegar
2 Tbsp. extra-virgin olive oil
1 Tbsp. Dijon mustard
salt and freshly ground black pepper, to taste
 
Place chopped Romain in a large salad bowl. Add remaining salad ingredients.
In a small bowl, whisk together the dressing ingredients.
When ready to eat, pour dressing over the salad, a little at a time until desired amount has been reached.
Toss salad to coat evenly.

Dissatisfactorily

While this blog may be perfectly serviceable as a journal of my successes, I do actually need a calendar for weekly menu & a book for recipes. My current method is not gonna cut it.

Thankfully I already have that big orange post-it pad to write out the recipes.

Time to head upstairs to the supply closet.

Similarly, any omelette or frittata recipes are out. DAMN!

Chicken tortellini w/ chopped grilled chicken & garlic bread

  • Level of difficulty: zero
  • Time: 18 mins
Store-bought garlic bread (start 1st, 18 mins to bake)
One big bag of chz tortellini
Olive oil & minced garlic
Store-bought pre-sliced grilled chicken

I love tortellini bc you can do anything to it. Variations include: alfredo sauce, vodka sauce, chicken lemon, chicken della dea (Kathy Wakile-style)...

Always a go-to.

Exploratories.

One of the ideas I've heard bandied about is the notion of a weekly food menu. I could do this on Sundays & grocery shop then. It's my tried and true day off, the Jewel is always open (don't need to get up early) and I'll be orgo for the week-o.

I will need to compare prices of grocerias but this is a can do. Again, got nothing but time here.
